Catholics, why do you believe any early writings from "church fathers", if the RCC was known for forgery?

If it was the RCC who added the page about Jesus in Josephus Flavinus writings, and if it was the RCC that added the Trinity verse in the book of John, why would you believe any writings from the supposent "church fathers" if your church was known to add stuff to other people's writings, let alone their own?
